African Spiced Sweet Potato with Labneh & Macadamia Nut Oil //

I’ve just discovered This Is Good’s Macadamia Nut Oil – a great alternative to coconut oil that’s rich in antioxidants, lower in saturated fat and higher in good monosaturated fats, while boasting a high smoking point making it versatile for both cooking and drizzling on salads etc. Sourced from South Africa – where I was born – I wanted to team it with a few other native ingredients and spices for a real flavour of home. Sweet potatoes grow in abundance in South Africa, which I baked and sprinkled with a mix of spices that are ubiquitous in South African cooking. Rooibos – which is usually drunk as a tea – mace, nutmeg, allspice, coriander seeds and chilli with salt. The Labneh, or strained yogurt, adds creaminess and helps soften the strength of the spice while This Is Good’s wonderful Macadamia Nut Oil finishes off the dish perfectly, giving it a satisfying buttery finish.
